I’ve searched through ALL files for the words “Bid added” that appear after selecting a flight, but can’t find it! I want to change it to “Flight Booked”.
I’ve found the text “Add bid” and changed that to “Book Flight” but can’t see where the “Bid added” text comes from.

The “Bid added” is included within your core/modules/Schedules/Schedules.php file. It should be around line 144.
