Real fuel calculations are done by computers and not humans. They use very complicated algorithms to accurately predict the fuel usage. The amount of elements taken into account, make it almost impossible to calculate fuel consumption in FS and here is why. Rate of fuel burn depends on ambient temperature, aircraft speed, altitude, weight, wind speed, flight distance, alternate airport, local regulations, taxi fuel, fuel weight, fuel weight change (as aircraft becomes lighter) .... Its not as simple as you think. And even if you get the method, even from a real pilot, then the calculations will still not be accurate as you will not get accurate enough weather information from FS, and most aircraft don't have real world physics calculated for them, hence their fuel burns are highly inaccurate.
