Just wanted to get some opinions, would you recommend switching from the full to beta versions of phpvms? 

If so what is the best way to update, and will any of our current data be deleted?

There's only one way to update, it's downloading the beta.zip, overwriting all the files, and then running the /install/update.php

It's usually pretty stable, sometimes there are broken things, but I quickly get emails about it and have a patch up pretty quick. You would have to stay upto date with them though, I'd recommend grabbing the latest every few days at least. The latest updates are always on there and bug fixes.

There might be little oddities here and there, but people using it what helps to me to nail the bugs down, so it helps me if you do use it.
